Partridgeberry Muffins

1 cup rolled oats
1 cup flour
1/2 teaspoon soda
1 cup brown sugar
4 tablespoons melted butter
1 cup sour milk (add 1 teaspoon vinegar)



1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup partridgeberries

Put rolled oats in bowl and add sour milk. Let soak. Add flour, sugar, baking powder, salt and soda. Add beaten egg and melted butter. Stir until blended. Fold in berries. Bake in greased muffin tins at 400ºF for 20 minutes.

Partridgeberries are also known as lingonberries, and are a relative of the cranberry family. These berries grow in the dry, acidic soils of Newfoundland and Labrador and are full of healthy vitamin c, anti-oxygens and other nutrients.
